- eggs large
- water to submerge eggs completely
Place eggs in a medium pot with cold water by 1 inch. Be mindful, the water must cover the eggs to cook evenly. Bring water to a gentle boil uncovered. Immediately turn off the heat, then cover the pot.
Let the eggs cook (steam), covered. For creamy yolks, remove the lid after 10 minutes, then run cold water over the eggs for about 1 minute depending on your desired donenedd and the number of eggs.
Transfer the eggs with a slotted spoon to a bowl of iced water and chill for 5 minutes. Peel and enjoy!
What To Do With Boiled Eggs:
While boiled eggs are perfectly fine with just a sprinkle of salt and pepper, you can add a few additional ingredients and turn them into something simple or adventurous: egg salad, deviled eggs, in tuna salad, eggs benedict, on top of avocado toast for a healthy meal in a hurry or my absolute favorite, Salad Niçoise and of course there are so many more dish ideas.
TIPS YOU SHOULD KNOW
- A gray-green ring around the yolk of a hard boiled egg means that it was cooked too long and or at too high a temperature. To protect against this, cooked eggs should be immediately immersed in cold water to stop the cooking process.
- Salting the water helps minimize leaks if the eggs crack in the pan; the egg whites coagulate and seal off the crack more quickly.
- To peel, gently tap a boiled egg against the counter, turning and tapping to make a crackle pattern. Start peeling at the broad end, where there is an air pocket. Running the egg under cold water is not necessary, unless they are too hot to handle.
- In recipes like mayonnaise and Caesar salad that call for raw egg yolks, the soft yolk of a poached or soft-boiled egg can be used instead.
- To test if an egg has been cooked, spin it on a counter. A hard boiled egg spins faster than a raw egg.
