Classic Wedge Salad Recipe
Load a simple iceberg wedge with blue cheese dressing, and the humble ingredients of crumbled bacon, chopped tomatoes, and onions from simple to elegant. Serve as an appetizer, as a favorite side companion to soups, or as a meal on its own!

- 2 medium tomatoes
- 2 tsp salt
- 1 head iceberg lettuce cut into 6 wedges
- 1 small red onion
- 1 tbsp vinegar
- 1 pound bacon diced
For the Blue Cheese Dressing
- ½ cup sour cream
- ½ cup mayonnaise
- 2 tbsp buttermilk
- ½ clove garlic
- ½ tsp salt
- ½ tsp freshly ground black pepper
- ½ cup blue cheese crumbles
- Chopped Chives for garnish
Ingredient Notes
- Iceberg Lettuce: Do not subsitute for something else. Icebergs shape is what gives the classic wedge its name.
- Tomato: I've used many varieties- Roma tomato or heirloon tomatoes when in season! Choose a firm, full flavored tomatoe. Use grape or cherry tomatoes halved or quartered for easy, flavorful tomato flavor. If you have homegrown tomatoes, use those instead! That flavor cannot be beat!
- Bacon: Pre cook your bacon or get some real bacon bits at the store to make this really easy on yourself!
- Red onion: Finely chop the onion to enjoy in every bite!
- Blue Cheese Crumbles: Use more or less depending on yoour taste.
Make the Dressing
In the bowl of a food processor or blender, add the sour cream, mayonnaise, buttermilk, garlic clove, salt, and pepper. Blend until completely smooth.
Fold the blue cheese crumbles into the dressing.
To make the iceberg wedges:
Cut the iceberg in half, scoop out the very bottom of the stem.
Then cut each half into three new wedges.
Wash the quarters carefully, allowing water to run in between the leaves. Drain it well on paper towels.
Top the iceberg wedges with the blue cheese dressing then the tomatoes, pickled onions, and crumbled bacon. Top with the chopped chives and serve immediately.
