Blueberry Arugula Herb Salad

This beautiful Blueberry Arugula Herb salad is super healthy and probably the freshest, most delicious salad that you'll ever have the pleasure of meeting... or eating! It's perfect for a crowd, great for parties, potlucks and picnics!

Ingredients
  

For the Quick Red Pickled Onions

  • 1 red onion halved and sliced into thin slivers.
  • 3 tbsp cider vinegar you can also use balsamic or apple vinegar.
  • 2 tsp sugar or honey
  • 1/8 tsp salt

Honey Mustard Lemon Dressing

  • 1/2 cup extra virgin oil
  • 2 1/2 tbsp honey
  • 2 tbsp apple cider vinegar
  • 1 tbsp dijon mustard
  • 3 tsp lemon juice, fresh
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper fresh

For the Salad

  • 3 cups baby arugula, in large clam shell package
  • 2 cups mixed greens, spinach or kale or butterleaf
  • 1/2 small head radicchio torn in bite-size pieces (optional)
  • 1/2 seedless cucumber, medium (Persian or English)
  • 1 cup fresh blueberries
  • 1/4 cup pecans
  • 1/4 cup goat cheese (or blue cheese or feta) crumbled
  • pansies (or other edible flowers for garnish), optional

Instructions
 

  • You'll need to plan ahead, for Pickled Red Onions as it will take at least 30-45 minutes for the onions to transform from ordinary to a beautiful magenta hue.

Pickled Red Onions

  • Combine all ingredients in a medium-sized glass jar and shake well.
  • Let the jar sit at room temperature, giving the jar a shake evry now and then, for at least 30 minutes.
  • The onions can also be made 24 hours in advance and refrigerated.
  • The longer the onions sit in the vinegar solution, the more vibrant the color becomes.
  • Drain the onion slivers well before adding to the salad.

For the Honey Mustard Lemon Dressing

  • Combine all ingredients in a medium-size screw-top glass (mason) jar.
  • Then, shake, shake, shake! That's it.
  • Dressing can be kept at room temperature for several hours then refrigerated for longer storage.
  • Shake again before serving.

For The Salad

  • Combine all ingredients except for bluberries, candied pecans, goat cheese, and pansies (if using) in a large bowl.
  • Then, gently toss.
  • Top with bluberries, candied pecans, goat cheese, and pansies (if using).
  • Serve the dressing on the side.
