Pineapple Agua Fresca

Pineapple agua fresca is a light and refreshing drink. It's a popular drink in Mexico during the summer time because it's hydrating, flavorful, and tropical!
This pineapple drink is perfect for entertaining or serving large parties. You can make it a day ahead and store it in the fridge.

Ingredients
  

  • 5-6 cups fresh diced pineapples
  • 5 cups filtered water
  • 1/4 cup sweetner of choice i.e. agave, honey, sugar
  • herbs for garnish i.e. mint, rosemary, basil, or thyme
  • 2 limes juice and wedges for garnish

Instructions
 

Prepare the simple syrup

  • In a small saucepan, combine the sugar and ¼ cup of water. Stir and bring to a boil. Let the simple syrup simmer for 1-2 minutes and then let it cool.

Blend the fruit and water

  • Using a high-powered blender, pulse the fresh pineapple and water on high speed for 1 full minute.

Extract the juice with a strainer

  • Extract the juice by straining the liquid through a mesh strainer into a pitcher. Discard any leftover pulp.

Taste and sweeten

  • Taste the agua fresca and add 1-2 tablespoons of the simple syrup at a time, until you’ve reached your desired sweetness.

Chill and serve

  • Chill the agua fresca for 2 hours in the refrigerator or serve immediately over ice. Finish with a squeeze of fresh lime and garnish with fresh mint leaves.
